Makes 2 sundaes
400g strawberries, hulled
2 scoops vanilla ice cream
2 scoops strawberry ice cream
2 tsp icing sugar
2 tbsp chopped nuts or sprinkles
6 shortbread or
digestive biscuits, crushed
- Blitz 50g (2-3) of the largest strawberries with the sugar in a food processor (or with a stick blender) to a smooth sauce. Strain through a sieve into a bowl; chill until ready to serve.
- Chop the remaining hulled berries into halves, or quarters if large.
- Layer up most of the crushed biscuits with the ice cream, strawberries and strawberry sauce in a tall sundae glass.
- Sprinkle with chopped nuts and the remaining biscuits then drizzle over strawberry syrup.
