Strawberry Sundae

Ingredients
Makes 2 sundaes

400g strawberries, hulled
2 scoops vanilla ice cream
2 scoops strawberry ice cream
2 tsp icing sugar
2 tbsp chopped nuts or sprinkles
Strawberry syrup
6 shortbread or
digestive biscuits, crushed

Method

  1. Blitz 50g (2-3) of the largest strawberries with the sugar in a food processor (or with a stick blender) to a smooth sauce. Strain through a sieve into a bowl; chill until ready to serve.
  2. Chop the remaining hulled berries into halves, or quarters if large.
  3. Layer up most of the crushed biscuits with the ice cream, strawberries and strawberry sauce in a tall sundae glass.
  4. Sprinkle with chopped nuts and the remaining biscuits then drizzle over strawberry syrup.
