- 500g chicken fillets, cut into thin strips
- 2 whisked egg whites
- 4 tbsp corn flour
- 1 large onion, cut into chunks
- 2 green peppers, cut into chunks
- 1 spring onion, sliced
- 2 garlic cloves, diced
- 1 tbsp vegetable oil
- Oil, for frying
- 1 mug of rice
Salt & Chilli Seasoning
- 1 tbsp salt
- ½ tbsp caster sugar
- ½ tsp Chinese 5 spice
- 2 tsp crushed chilli flakes
- ½ tsp garlic powder
- ¼ tsp ground ginger
- ¼ tsp ground white pepper
- OR 1 sachet Spicentice salt & pepper meal kit
Wash the rice in water then fry in a little oil. Add 2 mugs of boiling water and gently simmer in a pan with the lid on.
Dunk the chicken in the egg white, then corn flour before deep frying.
Remove the chicken pieces from the heat and drain on kitchen towel.
Heat oil in a wok and fry the onion, green onion, green pepper, garlic & chilli for 3 mins.
Add the chicken to the stir fry and season with the salt and pepper mixture.
Serve immediately with rice.
